I've thought about trying an acoustic mando. Since my first instrument was cello, I haven't forgotten tuning in fifths.

Try a mandocello.
I've wanted one for awhile after playing mandolin now for about 15 years, but I think
I'll probably get an octave mandolin next.

I already have a fiddle I don't play enough. Next fifth-tuned instrument on my list would be a tenor guitar.

Buzz, I know Moongazer offers some kits, though this one may have come from somewhere else.

The kits look nice but run $329 to $369 - I was hoping for something a little cheaper.  The Fender can be had for $299

Found a Saga kit that looks like Steve's on Amazon - $179

not to derail but...always wanted to try fiddle...Dave how long does it take to get a decent sound out of one?

It's hard for me to say because my first instrument was cello and I was surprised at how much I remembered even after 50+ years. OTOH I just bought it to fiddle around (pun intended) and if that's your goal, it shouldn't take long.

One excellent beginner's book/CD I've seen is Wayne Erbsen's Old-Time Fiddle For The Complete Ignoramus.
