As a Catholic I am free to surmise that there is no opposition between religion and the laws of evolution. God either had nothing to do with either primates or humans or he steered the sequential and parallel evolution of both, simple as that. Even the Vatican thinks so which, notably, makes all creationists heretics from a Catholic viewpoint.
And there really is no other valid viewpoint, creationists of all people have to admit that the Catholic Church came first. First mover privilege!
So that sculpture isn't so much offensive as thought-provoking. The artist is a(n albeit Anglican) churchgoer btw. and the Anglican Church (to this day a carbon copy of Catholic rites, when I witnessed my first Anglican mass, everything was utterly familiar) building it was displayed in was a real and active one. It was not to mock religion at all.
