Buy a Mac!?!  Not in my current budget I'm afraid.  Interfaces are not either.  I wish there were a simple low cost way to do this.

You don't need a Mac. You need a USB interface, recording software and a mic. Most of the interfaces (brands like Tascam, M-Audio, Lexicon) are shipped with recording software  and sometimes are offered bundled with a mic. I've seen basic packages like this for $200 or less. Just look at the specs and make sure the drivers are compatible, I know that some aren't compatible with 64-bit XP or Vista versions yet.

I plan on getting one when I have the spare cash.

I was surprised to discover that plugging straight into the mic input on my laptop works fine. You just need to make sure the mic input and output channels are turned up in the Windows mixer. (Remember to mute mic output before you unplug, unless you enjoy howling feedback.) I've used a stereo 2x mini-jack lead with a stereo 1/4" adaptor, and a mono 1/4" jack to mono mini-jack lead and both work. Then you just need free recorder software like Audacity. I can't see why this wouldn't work with other laptops (mine's an old Thinkpad T20) or a desktop PC.
