Ummm.......My receipe says you can definately sub Red Wine for the vinegar.
It's probably too late to change your mind mind but if you're interested I'll send what I've got for a receipe........I don't use any bacon and the peppercorns are supposed to just be part of the marinade.

Oh, and  Slade should be in the Rock n Roll Hall of Fame   ;)

Slade is the only band I know of that has actually come out with a rock Christmas song that is any good.

Oh, and I'd like the recipe as well, please, - I too love German food.  Bring on the vinegar!  I'll drink the wine while the beef marinates - or I'll marinate myself with the wine....

And, the RRHOF fame can bite me  -  bunch of elitist snobs :P

I can't believe you guys know and discuss Sauerbraten! Loved it as a kid and nowadays prepare it myself - people are always in love with my Sauerbraten!

Actually a poor folks' food; once meat started smelling a bit too strong and turn slightly greenish, you could still dump it in vinegar for a week and then cook it without ill effects to your family after consumption! Or use horse.

I love how a thread can go from a discussion about who deserves to be (or not) in the RRHOF to Sauerbraten recipes without anyone getting upset. Outstanding  ;D

RRHOF to me = Irrelevant.
