How can I convert a pickup to rw/rp?

I always had this question on my mind. If I just flip the magnet polarity of a single coil pickup, and connect its wires the opposite way (make the ground hot and vice versa) I would have create a rw/rp pickup? Or I will make an out-of-phase pickup?

Of a single coil pickup by itself? No.

If you have two evenly matched single coils and do that to one of them, it's not a true humbucker (because it's not actually reverse wound) but it will cancel hum.

What the output will be if I connect those single pups in series? Would be the double of the single coil alone?

It will be double the output of one pickup by itself but it won't sound twice as loud.

If you mean connecting two in series as opposed to two in parallel, it will be about 1.4 times the output but again, it won't sound like a 40% boost.
