I think you could get some of that plastic stuff that's used to clinch the end of cut ropes and dab a bit onto the end of the set screw.  It comes in small cans at Home Depot and ACE Hardware (I think). That would give you a non-abrasive coating that would be easy to remove if/when adjustments are needed.

nail polish works just fine. used it alot on the 60's and 70's fenders i had but the newer ones don't seem to need it.

Heat shrink tube.  Just make it slightly taller than the top of each screw.  You'll still be able to adjust them.
