Probably fewer, but no way to tell exactly. I've personally seen one (Steve Wood) and know of two or three others. It is believed that Sea Green ("Color of the Year" for Rickenbacker in 2000) was the only COY to be applied to a 4001V63 (at the factory, can't count custom refins). The V63 was produced into 2002, but I've not seen any evidence that any received Desert Gold (2001 COY) or Burgundy (2002 COY). V63s were supposed to be available only in Fireglo and Mapleglo, but inevitably some were finished in Jetglo. Right at the very end of 4001V63 production in 2002, a few were finished in Turquoise (I have one of three that I know of) and Midnight Blue.

I know Tim Sarter bought one new and had it for several years then sold it to someone at the RRF.

Yep, that's one of them. Don't know if Sarter's is the one Steve Wood got or not. Sure looks luscious, don't she?

The year 2000 is when Rickenbacker announced that the V63 would be discontinued. At that time you could order one in any of Rickenbacker's standard colors, including Turquoise and Midnight Blue. I was ready to order one in either Sea Green or Mid. Blue when I saw on a forum posts that said the V63 would be replaced by a more accurate vintage re-issue, so I waited, missed the window of opportunity, and Rickenbacker came out with that abomination with the reversed headstock and only available in Fireglo and Mapleglo.

Although the last order date for the V63 was December 31, 2000 it took until 2002 for them to be produced, but they could not be ordered in the Color of the Year for 2001 or 2002.

I ended up getting a 1986 V63 that I am very happy with.

I think the "Naked Tux" looks better. This one was a genuine Tuxedo (4003SPC Tuxedo) but the white had yellowed badly and unevenly. I had it stripped and refinished with a nice satin finish by Larry Davis:

As a rule I don't care for white basses but that one is beautiful. With keyworks like Lull, PLEK, checkerboard, and horseshoe, I'm guessing the reserve is out of my reach.
